This vintage recipe for Coconut Bars adds the salty crunch of macadamia nuts for a truly tropical treat. This recipe was originally published in 1988 in the Homemade Good News cookbook series.

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


  1. Preheat oven to 375°F.
  2. Cream butter and 1/2 cup sugar until light and silky.  Mix in flour. 
  3. Spread dough in 8-inch square pan. Bake for 25-30 minutes. 
  4. Toss coconut with 2 tablespoons of flour; set aside.
  5. Beat eggs with 1 cup brown sugar until smooth. Add vanilla, nuts and coconut.  Toss in a pinch of salt.
  6. Spread topping gently over baked crust. Return to oven for 12-15 minutes more. 
  7. Cool before cutting into 18 bars (3 across-6 down) and sprinkled with confectioner’s sugar if desired.
