Light and airy, this old fashioned sea foam recipe is found in one of our vintage cookbooks from 1951, Sue's Candy Kettle and Some of Her Success Secrets. Also known as Sponge Candy, this candy first appeared in the 1940s in Buffalo, New York. Some chocolate shops still make this delightful, melt-in-your-mouth treat.

About 50 pieces



  1. Cook brown sugar, water and vinegar to firm ball stage (240°F). Allow syrup to cool about 5 minutes.
  2. Pour mixture slowly into beaten egg whites. 
  3. Add vanilla. Beat until candy will hold its shape. 
  4. Quickly add coarsley chopped walnuts and drop from tip of spoon onto waxed paper. 
  5. Bake at 170°F for 30 minutes. 
  6. Store at room temperature in an airtight container.
