This classic angel food cake is a light, moist and fat-free sweet delight.  Serve it with fresh fruit or sorbet for an elegant and delectably healthy dessert.

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


  1. Preheat oven to 350°F.
  2. Sift together flour and powdered sugar twice and set aside.
  3. In a large bowl, whip on medium speed, egg whites, sugar, cream of tartar, vanilla extract and salt. Whip to medium peaks and add almond extract and lemon zest. Then, stop whipping. Do not whip to stiff peaks!
  4. Using a spatula, gently fold in flour-powdered sugar mixture.
  5. Spoon batter in an ungreased angel food cake or tube pan.
  6. Place in oven and bake for 40-45 minutes or until cake bounces back when lightly pressed with a finger. The cake will initially rise and near end of baking start to shrink slightly.
  7. Turn pan upside down and allow to cool.
  8. Run a knife around the edges of pan to loosen the cake.
  9. Serve as is or with sorbet, fruit, ice cream, etc.
